The heritage of Meurens’ “Vrai Sirop de Liège” : a Belgian story

In Belgium, few products embody the tradition of “homemade” and conviviality as much as Meurens' Liège Syrup. A true institution, “the real Liège syrup” tells the story of a century-old family business in the heart of the Pays de Herve.

It all begins in 1902. Clément and Joseph Meurens, from a family of farmers, launch their small factory in Aubel, just a stone's throw from Liège. Quickly, they develop an innovative recipe for pear jelly, combining 50% pears, 15% apples, and 35% sugar. This blend of flavors hits the mark: the jelly becomes famous, soon renamed “Pear Syrup from the Liège Region.”

But it was in 1947 that the Siroperie Meurens truly entered history: "Du Vrai Sirop de Liège" became a registered trademark. The recipe is passed down and evolves, while maintaining its foundations: a slow cooking process that respects the fruits, and above all, no compromise on quality.

The 1970s mark the export to Germany and other markets, while the family tradition of innovation continues with the merger of the syrup factories of Aubel and Herve in 1990. Today, Siroperie Meurens remains a driving force of Belgian gourmet identity, producing about 2,000 tons per year.

An authentic taste and a unique recipe

Liège syrup is this thick, black, shiny paste that is almost like jam. Its flavor? A delicate balance of sweetness, acidity, and a slightly caramelized note.

The main ingredients: apples, pears, dates. No artificial flavoring, no preservatives or coloring: only fruit and a measured addition of sugar (mainly local beet sugar). It is estimated that nearly 4 kg of fresh fruit is needed to make 1 kg of syrup. The result? An incredible fruity intensity, a rich texture, and a lingering finish that invites you to come back for more.

Thanks to steaming (and not direct heat, to preserve the flavors), Siroperie Meurens is still able today to offer a product that is both traditional and effective.

How to taste the real Liège syrup?

Belgium has found in Liège syrup a simple yet unparalleled comfort. Its primary use remains the tartine or sandwich: a generous layer of syrup on fresh bread or a baguette.

But where Liège syrup truly shows its indulgence is in the sweet-salty pairing with a strong cheese, like Herve cheese. A classic from the Liège region: a thin slice of cheese, a spoonful of syrup, a bit of salted butter... and it's a one-way ticket to the Belgian countryside at snack time!

In terms of cuisine, it's impossible to overlook the Liège-style meatballs (boulets sauce lapin), where the syrup coats the meat in an irresistible sweet and rich sauce. It can also be found in pancakes (the famous “bouquettes” or “lacquemants”), in marinades, or even as a topping on a white cheese.

Gourmet Variations

  • On toasted bread or a buttered slice
  • With Herve cheese or any aged cheese
  • To top pancakes and waffles
  • In a sauce for game or Liège meatballs
  • In your dessert preparations (tarts, cakes, etc.)
